Ingredients for the ice scraping recipe
- Crushed ice (or scraped)
- Condensed milk or dulce de leche (optional)
For chocolate scraping:
- 1/2 cup melted chocolate or liquid
- 1/2 teaspoon soluble coffee
- 1/2 cup of coffee or chocolate liquor
For scraping green lemon:
- 1/2 cup green lemon juice
- 1/2 tablespoon green dye (optional)
- 2 cups of water
- 1-2 cups of sugar
For fruit scraping:
- 1 cup of water
- 1 cup of sugar
- 2 packages of Kool Aid of the flavour we want
For scraping with natural fruits:
- 1 cup of water
- 1 cup of sugar
- Fruit pulp (the amount will depend on the taste of the fruit)
How to make the ice scraping recipe?
We prepare the chocolate honey for scraping:
Since chocolate is already liquid, making this chocolate syrup is not going to be complicated. All we have to do is mix the 3 ingredients well in a bowl or bottle (if we do it with the bottle it is simpler and this can be used to later pour the chocolate honey on the shaved ice.
We prepare lemon honey:
- We put the water in a pan over high heat and let it warm up while squeezing the lemons until we get the cup of lemon juice we are looking for.
- Once the water begins to boil, we add the sugar (the amount will be to the taste of each one). Once the boil breaks, we lower the heat to medium intensity and let it cook for 20 minutes.
- We let the water and sugar mixture cool completely and put it in a bowl along with the strained lemon juice so that it does not have pulp or fat residue.
- We mix well and if we want to give it a touch of green we add the dye and mix again … ready, a delicious lemon scrape syrup.
We prepare fruit honey:
- In this case we will use Kool Aid envelopes to get the flavours that we want (strawberry scraping, cherry scraping, watermelon honey …) so the preparation is very simple.
- We put the water and sugar in a saucepan, mix and bring the mixture to the fire. Let it boil over high heat, lower the heat to low heat and let it cook quietly for 5 minutes.
- Once we have the simple syrup (which is the previous one) we just have to add an envelope of the flavour that we have chosen, mix and add the other envelope when the first one has dissolved … With this preparation and these envelopes, we can prepare honey Fruits of the flavour we want.
- Once the scraped fruit syrup is cold, we put it in a bottle and we have it ready to water our ice with it.
We prepare honey with natural fruits for scraping:
- As in the previous case we will make a basic syrup with water and sugar. Once it has been cooked for 5 minutes, we add pulp of the fruit that we like the most.
- We let everything simmer over low heat for 2 to 5 minutes until the fruit is well dissolved and has released all its flavour … Ready, a syrup of natural fruits that as before we will let cool, we will put in a bottle and water with our Scraped off flavours.
We prepare the syrup of flavours with corn honey:
- These syrups will have the flavours of the fruits that we have chosen, so the first thing is that the fruit is free of skin and pipes before measuring the pulp cup. Once we have it ready, we crush it with the help of the blender and a little water if we see it necessary.
- In a casserole we pour the water sugar and the corn honey. We take it to the high heat and while stirring it we bring it to a boil. We lower the heat but making sure that the corn syrup is still boiling, and leave it on the fire until when the spoon is lifted the syrup falls like a trickle.
- At that time, we add the fruit (which we can have strained if we want, but it is not necessary) and leave it on the fire for 5-10 minutes since it begins to boil again. We will not lose our corn honey from sight and remove it often.
We prepare coconut honey for scraping:
- In a casserole we pour the water and put it on the fire. We also add the sugar and let it break the boil. Stir and leave on the fire until we see that the sugar is well dissolved (reserve 1 cup of this mixture).
- At this time, we add the milk to the casserole, mix and let it boil again. At that time, we add coconut milk, mix and nestle milk (or condensed milk), Mix and let everything warm again very well.
- We leave the mixture on low heat while we remove the meat from the coconut. Once we have the coconut ready, we cut it into tiny pieces and crush them together with the evaporated milk, corn-starch and 1 cup of water with sugar that we had reserved at the beginning.
- Once crushed perfectly we strain it (crushing well in the strainer so that all the juices come out) and we throw it in the casserole together with the essence of vanilla and the grated coconut.
- We leave everything on the fire, while stirring with some rods, and we will have it on the fire for 5 minutes. We put out the fire, let it cool and we have it ready to put it in the bottle.
- When this coconut honey cools, it forms a crust on its surface that can be crushed with the blender (removing it from the casserole) or it can be beaten very well with some hand rods until everything is perfectly integrated … This coconut syrup for Scraped is thick and with an incredible flavour.
We present the scraping:
- Once we have the honey for scraping that we like, we can only mount the scraping. We pour the crushed ice in the glass until it is almost filled and we bathe it with the syrup that we have chosen. We add a little more ice to make a pompadour, and we add more syrup … Ready.
- We can add some condensed milk or dulce de leche on the floor and the walls of the glass where we are going to mount it (this is to everyone’s taste).
